Southern Fried Apples

I love this simple dish.  It pairs well with sharp cheese as an appetizer; it can be a savory side dish or if you remove the cayenne pepper it can be a sweet compote for dessert.

Ingredients

2 T Butter
1/4 C Raisins
1 t Tapioca
1/2 t Apple Pie Spice
1/4 t Cayenne Pepper
1 Can Apple Pie Filling
2 T Dessert Topping


In a frying pan, add all the ingredients and slowly cook until the tapioca is clear.  If you'd like to speed up this quick dish, pre-soak the raisins in warm water until they plump.  You can also use tapioca starch to thicken and speed up the cooking process.


Isn't it a great feeling to find one thing that goes with everything?  It's so simple.  The ingredients can be a staple in the pantry for when unexpected company comes over and you're looking for an inexpensive, elegant but easy dessert.

Speaking of desserts, I like to dish this out into a shallow bowl and sprinkle with granola or use a pretty stemmed glass and layer between yogurt or whipped topping.
