Gluten-Free, Dairy-Free "IHOP" Pancakes

What better way to wake up in the mornings, especially on the weekend, than to buttermilk pancakes?  Is there anything that says " family " better than a nice breakfast? Instead of getting everyone together and heading over to IHOP or another equally fabulous breakfast place, and then torture yourself by not being able to eat those delicious pancakes that are served with everything due to dietary restrictions, stay home and comfy. Ingredients 1 1/4 cups All-Purpose Gluten-Free Flour 1 Egg* 1/4 cup Sugar 1 teaspoon Baking Powder 1 teaspoon Baking Soda 1/4 cup Oil 1/4 cup Dairy-Free Yogurt 1 cup Non-Dairy Milk 1 tablespoon Apple Cider Vinegar Dairy-Free "Buttermilk" Combine the milk and apple cider vinegar in a bowl and allow to sit for about 5 minutes.  The purpose of this is to semi-curdle your milk to make it into "buttermilk". In a bowl, mix the flour, egg, sugar, baking powder, baking soda, oil, and yogurt. Light a...

Gourmet Banana Butter

You've probably had maple butter with your hush puppies at fish camps or all-you-can-eat fish restaurants.  This would be delicious as well. This will make a delicious gift.  Gifts from the kitchen are economical and always appreciated.  There always seems to be a last-minute gift to give or dinner to attend and this can be made with plenty of time to spare.  This is such an easy item to make and combine a couple loaves of bread during the holidays for a gift. Ingredients 1/2 cup Butter 1 ripe small to medium Banana 1 teaspoon Cinnamon 2 tablespoons Brown Sugar 1 teaspoon Carmel Liqueur Allow the butter to soften.  This takes about 5-15 minutes depending on the type of butter you're using.  I like to freeze bananas when they become a little too ripe to eat so I brought one out and thawed it in the microwave for about a minute. This is an ideal out-the-door breakfast that is full of Protein, Vitamins B12, C, D , Calcium, and Riboflavin (not to mention all the other nutrients like iron, etc). Breakfast is probably the most skipped meal.  How many times have you had good intentions to start eating breakfast every morning to find yourself running late and saying that you'll grab something on the way?  By the time you're able to "grab something" they are all out of breakfast items so you end up settling for a donut or a bag of chips. Luckily for you, this delicious drink takes less time to make than the first cup of coffee.  No special equipment or brewing time required. Shake, Open and Pour.
