  1 lb Oyster Mushrooms
1 lb white Mushrooms
White Pepper
Unsalted Butter
2 small Shallots
Thyme
  Comté or Emmental Cheese***
  16 oz Heavy Cream
Freshly grated Nutmeg

Requeson Revuelto (Ricotta Scramble with Tomato)
4 Serrano Chiles
1 small White Onion
2 Plum Tomatoes
Ricotta Cheese

Indian Omelette
1 Red Onion
1 Green Chili Pepper
1 green chilly
Coriander Leaves*
1 tsp ghee (clarified butter)**

You will also need:


Eggs, Vegetable Oil or Olive Oil, Salt, Flour, Baking Powder, Baking Soda, Sugar, Corn Starch, Milk of your choice, Butter, Gluten-Free Bread


* Parsley, Tarragon, or Dill can act as substitutes for Coriander Leaves
** Soy Margarine is a nice dairy-free substitute for ghee
*** In place of the Comte or Emmental Cheese, you can use Sharp Cheddar Cheese

This week is all about showcasing Brunch for breakfast, lunch, dinner, or of course brunch.
