Wednesday Grilled Vegetable Sandwich 1 Medium Zucchini
1 Medium Sweet Red Pepper
1 Small Red Onion
Italian Salad Dressing
1 Lemon
Garlic
Feta Cheese
Thursday Pasta with Chorizo Arugula Pumpkin Cream Sauce
1 /2 lb ground Chorizo Sausage*
Pumpkin Puree
Heavy Cream

Arugula
1 lb dry Pasta***
Friday Fettuccine Alfredo 1/2 lb dry Fettuccine Pasta***
Unsalted Butter
Parmesan Cheese
Additional, for creamy version:
Heavy Cream
Nutmeg
Saturday Salmon Caesar Salad Garlic
Lemon
Worcestershire Sauce**
Parmesan Cheese
Anchovy Filets
Egg
1/2 Bunch Asparagus
Salmon Filet

1 Large Romaine Lettuce head


You will also need:

Vegetable Oil, Salt, Pepper, Salad, Salad Dressing, Olive Oil, Mayonnaise, Gluten-Free Bread, Milk of your choice

* Soy Chorizo is available in the fresh vegetable area of most grocery stores.
** Liquid Aminos or be sure to find vegan and gluten-free Worcestershire sauce.
*** Gluten-Free Pastas can be found in most grocery stores either mixed in with the other pasta selection or in a specific Gluten-Free area.


This week is all about quick and fresh.

These recipes provide great week-night meals for your family but they are also perfect for entertaining or special occasions.  If you or anyone has a special dietary need, these recipes are also easily adapted to Vegan, Gluten-Free, or Vegetarian.  An example of changing out ingredients in a meal to make it Vegan is to use soy or another nut milk, vegan cheese, vegan sour cream, vegan mayonnaise, or vegan Parmesan cheese.
