Chocolate Pudding

Are you new to being a Vegan and thought you'd never be able to eat pudding again or are you a host/hostess needing to make a delicious dessert for a Vegan?  This is our standby dessert for a couple reasons; 1) easy to make, 2) fast, 3) we know what is in it, and 4) everyone likes it!

Vegan Chocolate Pudding


1/4 C Sugar
3 T Unsweetened Cocoa Powder
3 T Corn Starch Dash Salt
2-3/4 C Milk (Soy, Almond, Rice)
2 T Butter
1 t Vanilla Extract

Combine the Sugar, Cocoa Power, Corn Starch, Salt and Milk in a small saucepan.  Stir continuously making sure the milk combination does not scald, as milk likes to do.  Cook this until it thickens.  Remove from heat and stir in the Butter and Vanilla Extract.

Divide into individual dishes and allow cooling before serving.  This is delicious served slightly warm with perhaps a biscotti.

I think this would be a really good base for a chocolate cream pie.  Would you add nuts and vegan marshmallows to make a delicious Rocky Road dessert?  Another use might be to add as a bundt-cake type filling.  What do you think?
