2 Medium Squash (or 1 Squash and 1 Zucchini)
2 Onions
2 Green Bell Peppers
3 Cloves Garlic
2 28 oz. cans Diced Tomatoes (or use fresh if you have them!)

Shredded Mozzarella Cheese
Monday Grilled Veggie Pizza

1 Large White Onion
1.5 lb. Tomatoes
1 Full Head of Garlic
6 ounces of Soft Goat Cheese
Dried herbs: any combination of rosemary, oregano, thyme
9 x 12 inch sheet of pre-made focaccia bread often sold in supermarkets.
Or
Purchase Your Favorite Ready-Made Pizza
Tuesday
Spicy Sriracha Grilled Tofu
Extra Firm Tofu
Sriracha (Thai Hot Sauce)
Roasted Sesame Seeds
Soy Sauce or Amino Acids
White Miso Paste
Scallions
2 Cloves Garlic
Wednesday Lemon Achiote Grilled Tofu Achiote (Annatto) Powder
Cayenne Pepper
Brown Sugar
3 Cloves Garlic
1 Lemon or 1/3 C Lemon Juice
Extra Firm Tofu
Thursday Portobello Burgers with Pesto, Provolone and Roasted Peppers
Pesto
Buns, Bread, or Rolls
Portobello Mushrooms (1 per person)
Provolone Cheese
Roasted Red Peppers (from a jar)Arugula or Spinach
Friday Grilled Tofu and Pepper Vegetarian Tacos Achiote “brick” Paste (Annatto)
Tapatio or other Hot Sauce
10 ounces Extra Firm Tofu
1 Medium Zucchini
1 Medium Onion
4 Cloves Garlic
2 Red Bell Peppers
1 Yellow Bell Pepper
24 corn tortillas
Saturday Grilled Eggplant, Halloumi and Pesto Burgers 1 medium eggplant, weighing about 1 lb.
Balsamic Vinegar
  Italian Seasoning
  4 oz halloumi cheese (Mozzarella, Feta, or Paneer)
Tomatoes
Lettuce
Pesto


You will also need:

Vegetable Oil, Salt, Pepper, Ground Cumin, Dried Oregano, Dried Basil, Italian Seasoning, Red Pepper Flakes, Salad, Salad Dressing, Olive or Canola Oil, Mayonnaise, Gluten-Free Bread or Buns, Drink of your choice


This week is all about grilling and enjoying your family outdoors.

Grilling during the warm weather months makes it so easy to enjoy being outside and somehow makes dinner a lot more casual and fun.

What if you don't have a grill or the weather is rainy or cold?  Then what?  If you have an indoor grill, grilling machine, or a pan that fits over the burner for grilling, then you can still enjoy all of these recipes anytime of the year!

These recipes provide great week-night meals for your family but they are also perfect for entertaining or special occasions.  If you or anyone has a special dietary need, these recipes are also easily adapted to Vegan, Gluten-Free, or Vegetarian.  An example of changing out ingredients in a meal to make it Vegan is to use soy or another nut milk, vegan cheese, vegan sour cream, vegan mayonnaise, or vegan Parmesan cheese.
