Weekly Menu for 9/23/2012 - 9/29/2012

Day Menu Item Shopping
Pressure Cooker Risotto
Zucchini or Butternut Squash
Yellow Onion
2 Cloves Garlic
Arborio Rice
Dry White Wine
32 oz. Broth of your choice
Parmesan Cheese
Roasted Baby Potatoes
1 - 2 pounds Baby or Fingerling Potatoes
Vegetable Stock
3 Cloves Garlic
Thai Coconut Chickpea

Dried Chickpeas
1 can Light Coconut Milk
Fresh Ginger
1 medium-large Sweet Potato
1 can Diced Tomatoes (no seasoning)
Curry Powder
Fresh CilantroFresh Basil
Tamari, Soy Sauce**
White Long Grain Rice
(Persian, Basmati, Jasmine, etc...)
Broth - optional
Eggless Chocolate Cake
1 cup All purpose Flour
Unsweetened Cocoa Powder
Baking Soda
Baking Powder
Lemon Juice
Vanilla Extract

Wheat-Gluten Flour
Barley Flour (or other whole grain flour)
Nutritional Yeast
Liquid Smoke
Toasted Sesame Oil
  Worcestershire Sauce***
Vegetable Broth

or try
Gluten-Free Seitan

New England Clam Chowder
2 cans (8-ounce) minced clams
1 quart light cream

If you omit the clams, this would be a delicious potato soup

Salt, Pepper, Butter, Oregano, Garlic Powder, Olive Oil, Vegetable Oil, Salad, Salad Dressing, Gluten-Free Bread

* Substitute your favorite vegan bacon
** Braggs Liquid Aminos can be substituted for Tamari or Soy Sauce
*** Look for a vegan Worcestershire Sauce
