Weekly Menu for 10/14/12 - 10/20/12

      Three 15-ounce cans Pumpkin Puree*
    Heavy Cream
    Cayenne Pepper
    32 ounces Ricotta Cheese
    6 ounces Parmigiano Reggiano Cheese
    8 ounces Fontina Cheese**
      Pumpkin and Mushroom Pasta with Gorgonzola

      1 Onion
      8 ounces Mushrooms
      1 Clove Garlic
      Red Chili Pepper Flakes
      1 pound Pasta
      1 cup Pumpkin Puree
      Heavy Cream
      Gorgonzola Cheese
      Sage Leaves
      Pumpkin Gnocchi

      Pumpkin Puree
      Sage Leaves
      Parmesan Cheese
      Pumpkin Fettuccine

      4 Garlic Cloves
      Heavy Cream
      Pumpkin Puree
      Herbs de Provence
      8 ounces Fettuccine
      Parmesan Cheese
      Autumn's Harvest Stew

      2 pound good-quality Stewing Steak
      1 large Onion
      1 large Carrot
      2 large Potatoes
      2 Garlic Cloves
      1 medium Parsnip
      1 small Pumpkin
      3 cups Beef Broth
      Dried Thyme
      15 Brussels Sprouts
      Mustard Powder
      Sweet Paprika Powder
      2 Bay Leaves
      Savory Pumpkin Quiche

      1 pre-made Pie Crust
      Cream, Half and Half or Whole Milk
      1 small Pumpkin or Pumpkin Puree
      1 Clove Garlic
      Fresh Parsley
      Pumpkin Chili

      1 pound lean Ground Beef
      1 medium Onion
      1 Green Bell Pepper
      1 (28 ounce) can Diced Tomatoes
      Tomato Juice
      2 (15.25-ounce) can Black Beans
      1 (15 ounce) can Pumpkin Puree
      Chili Powder
      Pumpkin Pie Spice
      Hot Sauce

      You will also need:

      Salt, Pepper, Olive Oil, Eggs, Butter, Flour

      * Make sure you have pure pumpkin puree and not pumpkin pie filling.

      ** Provolone, Gruyere, or Gouda cheese are nice substitutes, depending upon your preference, for Fontina.

      Sample some of this week's main dishes featuring Pumpkin.

      These recipes provide great week-night meals for your family but they are also perfect for entertaining or special occasions.  If you or anyone has a special dietary need, these recipes are also easily adapted to Vegan, Gluten-Free, or Vegetarian.  An example of changing out ingredients in a meal to make it Vegan is to use soy or another nut milk, vegan cheese, vegan sour cream, vegan mayonnaise, or vegan Parmesan cheese.
