Fresh Tomato Soup

Wednesday Cold Cucumber Soup 1 cup Seedless Cucumber
Plain Greek Yogurt
1 Green Onion

Salted Herbs (or a salt-free version such as Mrs. Dash)
Thursday Chilled Summer Berry Bisque 4-1/2 cups Blueberries (fresh or frozen blueberries)
Unsweetened Apple Juice

Plain Yogurt
Fresh Mint Leaves
Friday Chilled Summer Soup 1 Quart low-fat Plain Yogurt
Chicken Broth*
Rice Wine Vinegar
1 medium-sized Seedless Cucumber
2 medium-sized Plum Tomatoes
Scallions (green onions)
Fresh Dill
Saturday Cold Yellow Summer Squash Soup 6 to 8 Medium-sized Yellow Squash
Chicken Broth*
Lemon Juice
Onion
Fresh Dill
Fresh Basil
Sour Cream

You will also need:

Salt, Pepper, Garlic Powder, Ground Cinnamon, Ground Nutmeg, Salad, Salad Dressing, Olive Oil, Gluten-Free Bread, Drink of your choice, Food Processor or Blender

* In place of Chicken Broth you can use Vegetable Broth to make this a vegan soup.


This week is all chilled summer soups.

These recipes provide great week-night meals for your family but they are also perfect for entertaining or special occasions.  If you or anyone has a special dietary need, these recipes are also easily adapted to Vegan, Gluten-Free, or Vegetarian.  An example of changing out ingredients in a meal to make it Vegan is to use soy or another nut milk, vegan cheese, vegan sour cream, vegan mayonnaise, or vegan Parmesan cheese.
