Winter Vegetable and Tofu Korma

ground cardamom

2 medium yellow onions
 fresh ginger
4 medium cloves garlic
1 1/2 pounds waxy potatoes
12 ounces cauliflower

greek yogurt
  heavy cream
a small bunch of fresh cilantro
"I use a yogurt/cream blend here, which is inspired by Indian kormas, but there is no reason you couldn't substitute coconut milk for that lux-y creamy component."

Massaman Vegetable Curry

Massaman curry paste
1 onion
2 cloves garlic
1 (3/4″) piece of ginger
1 can regular coconut milk
2 large potatoes
1 zucchini
2 carrots
1 red pepper
1 large handful snap peas
1/2 lb. mushrooms
1 can water chestnuts
1 can cut baby corn
brown sugar
tamarind chutney or paste
smooth or crunchy peanut butter
lime juice
Bragg’s Liquid Aminos**
cashews

Vegan Goan Tofu Curry
turmeric
2 cloves
  cinnamon

4 cloves of garlic
  fresh ginger
  creamed coconut (coconut milk)
  cider vinegar
  firm tofu
  Dijon mustard
4 ripe tomatoes
1 large onion
  tomato purée (Tomato Paste)

brown rice flour

tapioca starch
Himalayan rock salt

demerara sugar***

full fat coconut milk

pepper (red or orange or yellow are nicest)

dried chickpeas (the smallest you can find)

1-2 garlic cloves

Rice, Cinnamon, Vegetable Oil or Olive Oil, Salt, Pepper, Milk of your choice, Salad, Salad Dressing, Gluten-Free Bread

* 1/2 teaspoon Asafoetida = 2 minced Garlic cloves
**Gluten-Free Soy Sauce can be substituted for Bragg's Liquid Aminos
***Light brown sugar or Turbinado sugar can be substituted for Demerara Sugar
