Vegan Bacon Bits (such as Bacos)

Agave Nectar or Maple Syrup
Friday Terry Hope Romero's Red Chile Corn Salad with Limas and Cherry Tomatoes Corn
White Lima Beans
Cherry Tomatoes
Red Onion
Fresh Cilantro
Lime
Chile Powder or Hot Smoked Paprika
Agave Nectar
Saturday Virginia Louise's Hearty Summer Salad
2 x 15 oz. Chickpeas (garbanzo beans)
2 x 15 oz. Black-Eyed Peas
2 x 15 oz. Artichoke Hearts
4 Large Tomatoes
Large Onion
6 Cloves Garlic
Balsamic Vinegar

You will also need:

Vegetable Oil, Salt, Pepper, Basil, Sugar, Garlic Powder, Onion Powder, Dried Parsley, Salad, Salad Dressing, Olive Oil, Mayonnaise, Gluten-Free Bread, Milk of your choice


This week is all about Salads to serve at a picnic or to bring along for a pot-luck.

These recipes provide great week-night meals for your family but they are also perfect for entertaining or special occasions.  If you or anyone has a special dietary need, these recipes are also easily adapted to Vegan, Gluten-Free, or Vegetarian.  An example of changing out ingredients in a meal to make it Vegan is to use soy or another nut milk, vegan cheese, vegan sour cream, vegan mayonnaise, or vegan Parmesan cheese.
